We collect our honey at different times through the season to give a unique variety of flavors that is different year to year. Once we extract the honey it is only lightly filtered to provide an exceptional final product full of pollen and flavor to excite any palate.

2021 Honey Flight

We are happy to announce a new flight from the 2021 season. This year’s flight is from aperies in Clarke and Oglethorpe counties and displays the changes in flavor of honey as the flowers the bees forage from changes of the season.

Extractions 1 and 3 are from the same apiary in Oglethorpe County and were pulled from the hives in early May and mid June. Early extractions like Extraction 1 showcase the bright flavor of early season honey.

Extractions 2 and 4 were both pulled from our apiary in Clarke County at the end of May and mid July. Extraction 4 is a wonderful example of a late season amber honey that exhibits richer, more complex flavors.
