Athens Bees Honey

We started the 2019 season with the idea that honey extraction would be a singular event based on previous seasons. The ladies decided that was not going to work for their schedule. By the end of this season, we have distinct honeys from four individual extractions. Each honey offers a different taste based on when and what the bees were foraging on.

Honey Flights

Sometimes picking a single extraction to bring home can be difficult. If you can not decide on one honey, try a flight of all four.  This is a great way to try all four extractions and experience the different flavors that our bees were able to create this year. Flights make great gifts or as a party conversation piece.  Because of the limited quantity produced this year, the 5 oz jars of Extractions 3 will only be available in honey flights.

Extraction 1 - Sold Out

Extraction 1 has a nice bright sweet flavor with floral notes. This extraction would be best as a general purpose honey for baking or sweetening your tea. This honey provides additional flavor over Extraction 2 without being over powering.

Extraction 2

Extraction 2 is the lightest of the honeys with a pleasant mild flavor profile. This extraction would be best for baking and adding sweetness without over powering your palate.

Extraction 3

Extraction 3 is a truly exceptional honey that is hard to find in the southeast. This dark honey has a bold nutty flavor that is perfect for your freshly baked bread or dishes where honey is expected to be the main star.

Extraction 4

Extraction 4 has a flavor profile that you would traditionally expect from honey. This amber honey has a nice floral taste with a slight bitter finish. This honey provides additional flavor over Extractions 1 or 2 and provides an exceptional taste without the bolder, nutty profile of Extraction 3.
